Is it possible to install the OTA update after I have rooted my phone and removed all Sprint bloatware? If not, is there a way I can update Android through my computer without losing all of the apps I have installed?

The entire system must be intact and stock to perform an ota, there are checks in the update scripts

You can perform a backup in clockwork recovery, then after updating only restore the data partition (this is where all your apps, settings, ad private data are stored)

There's a reason why it is extremely hard to get rid of smartphone bloatware.
